LITTLE PIZZAS WITH PEARS & CHICKEN



What to cook when you have 10 people (from age 5 month to 62) staying at your place for a week?
Pizza of course :).
I made 2 different options: vegetarian one with Pears and meaty one with Chicken and Spinach.



Ingredients:
Pizza:
10g yeast
2 tsp sugar
90ml warm milk
450g flour
pinch of salt
190ml water

Topping:
1-2 Chicken breast, cooked and diced
200g frozen chopped Spinach
2 Pears, sliced
400g chredded Mozzarella cheese
2 Tomatoes, thinly sliced
1 can of diced tomatoes
garlic clove, crushed
basil leaves
salt
olive oil

First make the pizza dough.
Mix yeast with sugar and warm milk. Add flour, salt and water.
Knead the dough until smooth and place it in the oiled bowl. Leave it for 1 hour until double in size.
Punch the air out of the dough. Divide the dough into 10-12 pieces and flatten each piece of dough into a circle.
For the tomato base mix canned tomatoes with garlic, basil leaves (optional) and pinch of salt.
Spoon the tomato sauce onto the pizza bases.
Make half of the small pizzas with Chicken, spinach, mozzarella and tomato slices.
The other half topp with pear slices and mozzarella.
Drizzle some olive oil over the pizzas and bake for 10-15 minutes in 240C or 475F.

WELCOME SPRING PASTA & WILD GARLIC PESTO

 

I love to have my own garden. Food grown in your own garden is simply the best you can have. It tastes wonderful.
Every spring we are waiting eagerly the wild garlic season to start.
Pasta with Wild Garlic Pesto is the familys' favorite. It is so easy to do and just amazing.
 
 
Ingredients:
 
200g Pasta. We love the whole durum wheat Fusillis
50g Wild Garlic leaves. Add also some Basil leaves if you have.
30g grated Parmesan. Important to have a good Parmesan cheese. It gives much better flavour.
30g roasted Pinenuts. Roast nuts yourself on the pan without oil.
1 Spring Onion, chopped (optional)
50-100ml Olive Oil. Try yourself to the right consistency.
 
 
Cook pasta with salt al dente according to package instructions.
I don't like to use the food processor and just mixing in a bowl together the Wild Garlic (if the leaves are big then cut them in smaller pieces), Parmesan, Pinenuts, Spring Onion with Olive Oil. Season with salt and pepper.

SWEDISH WONDERFUL POTATO DUMPLINGS

Actually eating is one of the biggest pleasures in life.
Enjoy it.
Listen to your body.
Take your time.
Food is wonderful.

Below is the recipe for swedish wonderful potato dumplings or Kroppkakor how they call it. I made my own version of this classical dish.


Ingredients:

600g boiled potatoes (not the new ones)
100g flour
1 egg
200g mushrooms, chopped
1 onion, chopped
1 garlic clove, chopped
1 little chili, chopped
1tsp salt
pepper
oil or butter
water
100g creme fraiche

Mash the potatoes well or press them through a potato ricer. Wait until totally cold. Add flour, egg and salt and mix everything together.
Fry onions and garlic in a little oil or butter until soft. Add mushrooms and chili, salt and pepper. Fry another minute.
 Cut dough into 10-12 golf ball size or bigger pieces. Flatten each piece in hand and place 1 spoons of mushroom filling into the centre of the piece. Form it back into ball.
Boil the dumplings in a large pot of salty water about 10 minutes.
Fry the dumplings with some oil and leftover mushrooms.
I love to eat them with creme fraiche.

THE TOTALLY NUTS BANANA BREAD

Ingredients:

  • 6 Tbs. (3/4 stick) unsalted butter, at room
    temperature
  • 1 cup/225g sugar
  • 2 or 3 very ripe bananas, coarsely mashed
    3 eggs, lightly beaten
  • 1⁄2 cup/119ml buttermilk
  • 2 cups/250g all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. freshly grated nutmeg
  • 1⁄2 tsp. salt
  • 3⁄4 cup/100g coarsely chopped walnuts, pecans
    or hazelnuts

Directions:

Preheat an oven to 350°F. Grease and lightly flour a 9-by-5-inch loaf pan.

In the bowl of an electric mixer fitted with the flat beater, beat together the butter and sugar on medium speed until creamy, about 1 minute. Add the bananas and eggs and beat until smooth. Add the buttermilk and beat just until combined.

In a bowl, stir together the flour, baking soda, baking powder, nutmeg, salt and nuts. Add the flour mixture to the banana mixture and beat just until combined. The batter should be slightly lumpy. Scrape down the sides of the bowl.

Pour the batter into the prepared pan. It should be no more than two-thirds full. Bake until the loaf is dark golden brown and dry to the touch and the edges pull away from the sides of the pan, 55 to 60 minutes. A toothpick inserted into the center should come out clean. Let the bread rest in the pan for 5 minutes, then turn the loaf out onto a wire rack and let cool completely. Cut into thick slices to serve. Makes one 9-by-5-inch loaf.

Storage Tip: Wrap the bread tightly in plastic wrap and store at room temperature overnight or in the refrigerator for up to 5 days.
