DUTCH OVEN MIXED SEEDS BREAD


Smell of freshly baked bread.
Why we love it so much?

Ingredients:
20g fresh yeast
300g water
500g plain flour
9g salt
pinch of sugar
handful of different seeds
oil

Mix yeast with water. Add salt, sugar and flour. 
Knead with hands or food processor.
Cover and let rise 1 hour.
Knead the dough 1 -2 minutes and put it into oiled dutch oven. Let rise second time.
Preheat oven at 230C/450F.
Garnish the bread with seeds and rub some oil over the surface of the dough.
Bake the bread 30 minutes in the middle of the oven with lid on.
After 30 minutes remove the lid and bake another 10 minutes.

CARROT BUNS


Visited farmers market yesterday.
Bought some strawberries and dill and beetroots.
Went by some tourists just when they took a photo.
So now I am on their photo.
How many other photos are there all over the world with me on the background?
Interesting to know but I will never find answer to this question.

7-9 buns
Ingredients:
250 ml plain yoghurt
20 g fresh yeast
20 g sugar
1 egg
2 carrots/grated
1.5 tbsp sea salt
100 g rye flour
400 g plain flour
75 g  butter/ cold cubes
some rolled oats for garnish

In a mixing bowl mix yeast with yoghurt and sugar.
Beat the egg and put 2 tbsp in fridge.
Add the rest of the egg, salt, carrots and flour to the yoghurt mix and beat on low speed for 3-5  minutes.
Add butter cubes one after another to the dough. 
Cover and let rise 2 hours.
Make small dough buns. Put some rolled oats on the top.
Let rise another 40 minutes.
Bake at 200C /400F for 10-15 minutes until buns are golden brown.
Take the buns out of the owen.
Brush quickly with beated cold egg.

DR. BIRCHER MÜESLI


 
There are mornings and there are Mornings.
Sun is shining.
Birds are singing.
Spring is finally here.
And I am having amazing breakfast with Dr.Bircher.
 
 
2-3 Servings

Ingredients:
100g (1 cup) rolled oates
2 unpeeled apples, coarsely grated
180g natural yoghurt
30g (1/4 cup) walnuts
handful of berries like blueberries and strawberries, 1/3 mashed
Honey

Mix everything in a bowl. Leave it for 1 hour or more.
Top with some berries.
Add honey if you like it sweeter

BUTTERMILK PANCAKES


-18C this morning.

I think I am the only one in Switzerland at the moment who is not complaining about the cold weather.

I love it.

I am really enjoying it.

I don't want it to get warmer.
Not yet.
It is so nice.

I love the real cold snow sounds.

And I am eating buttermilk pancakes with soft cheese and salmon as the snow falls softly outside my window.





Ingredients


3dl Buttermilk
2 eggs
2 dl plain flour
1/2 teaspoon salt
1 tablespoon sugar  
1 tsp baking powder
oil/butter 

Smoked salmon
Soft cheese

Beat eggs with sugar. Add buttermilk and salt. Mix flour with baking powder and add it to milk mixture. Whisk everything together and (if you can ;)) let the batter rest for 20 minutes.
Heat a frying pan on medium heat and add some oil or butter. Pour some mixture into the pan and swirl gently. Cook until golden from both sides. Set the pancakes aside.

To serve add some smoked salmon with soft cheese.

PANCAKES IN ALPS


Saas Fee is a winter wonderland in swiss Alps. Beautful white mountains surrounding this charmy little village. The best thing is to go there with some good friends and have some fun together. I love cross country skiing and took some girls with me to try some white slopes in the nature. It was great fun. I am proud of a good friend at http://unasemplicepassione.blogspot.com/ who did cross country first time in her life and really liked it.

Passionate food lover as we are there were many evenings of cooking together and trying some swiss culinary winter highligts in nearby restaurants. It is not possible to have skiing holiday in Alps without trying swiss Fondue. Every village in Alps making their on one with local cheese. Yummy.

The other local speciality is the Apfelstrudel. I thought it was an austrian speciality but in Saas Fee I had the best Appelstrudel ever. I had to go back to this little apfelstrudel cafe every evening after cross country skiing and enjoy this piece of heaven mmmmmmm.

One evening we had a pancake evening.  The best thing with pancakes is that you can eat it them with almost everything: jam, cheese, salmon, cottage cheese, fruits, ice cream.

I grow up with pancakes. We had them almost every weekend. My dad made always big thin ones and my mum little fat ones with buttermilk. In Saas Fee I made the big  thin pancakes with salmon and cottage cheese.

SIMPLY PANCAKES

Ingredients

Basic pancakes:

3dl milk
2 eggs
2 dl plain flour
1/2 teaspoon salt
1 tablespoon sugar  
oil/butter


To add:

Smoked salmon
cottage cheese
dill
or
ice cream and fruits

Beat eggs with sugar. Add milk and salt. Add flour to milk mixture. Whisk everything together and (if you can wait ;)) let the batter rest for 20 minutes.
Heat a frying pan on medium heat and add some oil or butter. Pour some mixture into the pan and swirl gently. Cook until golden from both sides. Set the pancakes aside.

To serve add some smoked salmon, cottage cheese, dill and fold the pancakes together.
Ice cream and fruits are a good sweet alternative.

Pain au Chocolat and Berry Melon


I woke up early Sunday morning and made a surprise birthday breakfast for my husband. Warm Pain au Chocolat directly from oven, healthy Berry Melon and a glass of fresh orange juice. He was very happy when I woke him up with a yummy breakfast in bed. Even the weather was smiling and late summer morning sun was shining in the blue sky :).

Berry Melon

Servings: 2

1 Melon
your favorite berries
powdered/confectioners' sugar

This is really easy, healthy summery dessert. And it looks wonderful.
Take a little melon and cut it in half. Remove the seeds in the middle. Add your favorite berries in the middle and serve with powdered sugar.

Pain au Chocolat

This is recipe from one of my favorite chefs, swedish Leila Lindholm.
8 pieces

250g Puff pastry
50g Nutella
25g Dark chocolate (70%)
75g Marzipan
1 Orange zest
1 Egg
Flaked Almonds
Powdered Sugar

Preheat oven to 175 C.
Cut the puff pastry in half and then both halves in 4 rectangular parts.
Add Nutella across one of the short ends of the rectangle.
Chop the chocolate in big pieces, grate the marzipan and add it together with orange zest over the Nutella cream.
Roll up dough tightly, enclosing chocolate.
Brush the tops with beaten egg and add some almond flakes on the top.
Bake in the middle of oven 20 minutes until golden.
Before serving add powder sugar.

POTATO PANCAKES & CRANBERRY SAUCE


It's so nordic, so delicious. Potato pancakes with cranberry sauce. They call them raggmunkar in swedish. Don't use new potatoes because they do not contain enough starch to hold the pancake together. Serve it with fried bacon or smoked salmon.
And nothing else matters :).

Potato pancakes
500g cooked potatoes
2dl milk
10g butter
salt
pepper
4 eggs

fried bacon

Cranberry sauce
225g cranberries
1 dl sugar



Mash cooked potatoes and add hot milk, butter, salt&pepper. I am usually adding some harissa aswell but this is optional and not very swedish :). Add eggs. Mix it well.
Fry little pancakes on the medium heat until light brown on the both sides.

For cranberry sauce just mash raw cranberries with sugar. It doesn't have to be more complicated than that.

Serve with bacon, cranberry sauce or smoked salmon.
